MUNCHIE MONDAY

A WEEKLY HOME COOKING COLUMN FEATURING QUICK RECIPES WITH LOCALLY SOURCED INGREDIENTS

EASY HOMEMADE RAMEN

Food is life in Ogden, and we want you to have a long life! Today we are starting this home cooking column, and we’re excited for this week’s recipe.

This is a full-flavored Ramen perfect for a cold winter day. And the best part is that it takes less than 15 minutes.

Fancy Ramen At Home
Serves 4

INGREDIENTS:

  • 1 container of your preferred broth. Beef or Pork broth is more traditional. I use veggie broth.

  • Star Anise

  • Pepper to taste

  • 2 TBSP soy sauce

  • Your favorite veggies. (Currently available locally are Microgreens, Kale, Carrots, and Broccoli. Harmon’s has a few local produce options, and you can also shop at Urban Prairie Agriculture. I also used green onions and sweet peppers from the store.)

  • Your favorite herbs. I used local cilantro and local basil.

  • 1 soft-boiled egg per serving (optional)

INSTRUCTIONS:

Boil the broth in a pot, add in Star Anise, pepper, and soy sauce. Boil while you chop your veggies and herbs. In a bowl, place 1 serving of uncooked Ramen, and pour broth over the noodles. Let sit for 3 min. Then top with veggies and herbs. Slice the peeled egg and place on top. Fast, simple, fresh, healthy. Enjoy!

From there, her interest grew towards the importance of low-barrier access to food, for all. In 2019 Anne began her own small business, Urban Prairie Agriculture, to address both sustainable agriculture and low-barrier access to local food economies. After receiving her Bachelor’s degree in 2011, and as a passionate social needs advocate, Anne has experience in both social service planning and practices as they apply to larger social impact systems. When social advocacy is applied to agriculture, measurable results follow; Anne is on the path to realizing that goal.
