Elevated Bagel Company brings a breakfast staple to Ogden

Up until recently, Ogden’s local bagel shop scene was virtually nonexistent. An everything, blueberry or plain with cream cheese might be a breakfast staple along the East Coast, but this tradition doesn’t seem to follow along the Wasatch Front. Ogden transplants Dylan and Jazz Robles sought to change that. 

Elevated Bagel Company, located at 2347 Washington Blvd., opened its doors last September, and is the result of former aircraft mechanic Dylan and former hairstylist Jazz deciding to live life to the fullest and pursue a new dream. The couple had previously lived in 10 different states before falling in love with Ogden and calling it home. They liked the outdoors and unique energy of Ogden, but did notice the lack of one of their favorite foods.

“Everywhere we lived or everywhere we visited, we would find the local bagel shop and it would be our thing to get coffee and bagels,” Jazz said. 

The bagels became a tradition for the couple because, as an aircraft mechanic, Dylan would work long weeks, often only getting one day off a week. During those days off, they would usually stop for a bagel before going on a hike. With that piece missing here in Ogden, they decided they would start making bagels themselves – a recipe journey that would take nearly two years to perfect.

“We learned so much about bagels and then we got super nerdy about it and just went into the deep a bit,” Jazz said.

Elevated Bagel Co. offers eight different bagel types with multiple spread and sandwich options, but putting together this menu did not come easy. The bagel recipe Dylan and Jazz settled on is about the 50th iteration, after a grueling trial and error process.

“It feels like this secret society almost hidden behind closed doors, and there’s this very hard information to come across. Whereas, if you want to make chocolate chip cookies, you can find a good chocolate chip cookie recipe online and just follow it to the T and you’re gonna get good chocolate chip cookies,” Dylan said.

The process to make a bagel is very precise. The exact gram amount of ingredients, the percentage of water used in the dough, and even the elevation at which they are made all factor into how the finished product will turn out. 

Because they’re still relatively new to the bagel industry, Jazz said they both sometimes feel imposter syndrome, especially when they have customers from New York or New Jersey – places world-renowned for their bagels–say that Elevated Bagel Co.'s remind them of home.

“It’s very validating,” Dylan said. “We’re just regular people, you know, we’re not restaurant professionals. So maybe we are now, but we’re just learning things as we go. So that’s cool.”

Elevated Bagel Co. strives to be as local as possible. Meat is sourced from Lower Farms in Richmond, flour from Big J Milling in Brigham City, and coffee from Wasatch Roasting Company just a few blocks away on Grant Avenue. Dylan and Jazz even worked with Wasatch to create a new coffee blend, which they call the Dirtbag Blend. The bagels themselves are made in-store, with Dylan and Jazz starting their day sometimes as early as 1 a.m. in order to make them. 

In order to try Jazz’s favorite bacon, egg and cheese, Dylan’s favorite gravlax on a jalapeño cheddar bagel or any other delicious combination, visitors can stop by from 8 a.m. to 2 p.m. Wednesday through Sunday.
